Spinach and Sun Dried Tomato Rice, with Broccoli Slaw and Pan Seard Chicken Breast
- 2 Chicken breast
- 3 tblsp Olive oil
- 2 tblsp unsalted butter
- 1 1/2 cup of Basmati rice
- 2 cloves of Garlic
- 1/2 cup Sun Dried Tomato
- Fresh Spinach
- 2 cups Broccoli slaw mix
- 1 tablespoon Mayonnaise
- 1 tablespoon Cane Sugar
1. Add garlic to the rice, cook according to package directions. During the last 10 minutes of the rice cooking add the fresh spinach and sun dried tomato to the the rice.
2. Melt 1 tablespoon butter and heat olive oil in a large skillet over medium heat. Brown on both sides in the skillet. Cover, and continue cooking 10 minutes, or until chicken juices run clear.
3. In a medium bowl. Whisk together the mayonnaise, sugar, and then add to the Broccoli slaw mixture. Mix well to combine and taste for seasoning; add more sugar if desired.
